Michelle’s Spanish Rice

My friend Michelle gave me this recipe and my family really likes it!  Of course, it could be quite spicy, so adjust to your family’s liking.  I keep mine pretty much a 0-1 on a spiciness scale!  This side dish is so beautiful with the green and red colored peppers mixed throughout the rice!

Spanish Rice:
Brown Rice- Follow Package Instructions for cooking (probably 2 cups dry would be a good amount).
1 Onion, Diced
Coconut Oil for saute’ing
1 Poblano Pepper, Diced
1 Green Bell Pepper, Diced
1 Red Bell Pepper, Diced
1/2 to 1 Jalapeno Pepper (optional for spiciness)
1 Can Diced Tomatoes with Green Chiles
1/8 cup of Hot Sauce (for color) (I omitted this)
1-2 tsp of Sea Salt (adjust to taste if needed)
A dash of Pepper
1 tsp Honey
1/2 tsp Worchester Sauce (I use either a vegan brand or homemade)
1/4 cup Cilantro, Chopped

-Sautee the onion and all the peppers in coconut oil.
– Add all ingredients to the rice and stir.  (If your rice is still cooking, you can let the ingredients simmer in the rice for 10-20 minutes after sautee’ing).

Enjoy this side of Spanish rice with your favorite Spanish food… tacos, burritos, beans, enchiladas, etc!  Thanks Michelle for the recipe!
