Vegetarian Tacos!

Taco night is one of my favorite meal nights!  Not only is it one of my EASIEST meals, but it’s so delicious, fun to eat, and very nutritious!  Here’s how I do tacos.

“Meat” Mixture:
1/2 cup Brown Rice (well rinsed)
3/4 cup Lentils (well rinsed)
1/2 Onion, diced
Some sort of bean- I usually use about 1  1/2 cups of “refried” beans (blended black beans or blended pinto beans with salt and cumin) or about 1 1/2 cups of cooked black beans
1 Packet of healthy Taco Seasoning Mix

1 Package Hard Taco Shells (The only ingredients should be corn and oil).
A Bag of Organic Tortilla Chips

All the Taco Toppings:  Salsa, Lettuce, Tomato, “Ranch” as a sour cream substitute, and any other desired toppings such as black olives, corn, nutritional yeast, diced green onion, etc.  Oh, and cilantro tacos are good, just add freshly chopped cilantro!

1).  Cook the rice and lentils according to package directions and saute onions, then combine.  OR Put the rice, lentils, and onion into a pressure cooker with 2 3/4 cups of water and cook for 12  minutes at pressure.  Immediately release pressure.

2).  Add your taco seasoning and beans.  Mix well.

3).  You can either put your “meat” mixture in hard taco shells and pile full of toppings, or dish up a bowl of mixture with all your toppings and eat it with tortilla chips.

Taco Seasoning Packet Note: The only brand I’ve found that doesn’t have any type of sugar, MSG, or other bad ingredients is “Wick Fouler’s Famous Taco Seasoning Mix.”  I used this packet as a guide and made my own taco seasoning, here’s my recipe…

Homemade Taco Seasoning:
2 1/4 tsp ground Chili Pepper (I use mild)
2 tsp Celtic Sea Salt
1 1/2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Cumin
1 1/2 tsp Oregano

-Use 3-4 Tbsp per batch of tacos.
